Spinach with chilli and garlic

Background
This is a fantastically easy yet really tasty side dish. It's super-healthy too and contains no dairy nor gluten. It goes well with most roast & fried meat or grilled fish.
Ingredients
- 3 garlic cloves, sliced
- 250g baby spinach
- Β½ tsp dried chilli flakes
- 3 Tbsp olive oil
Instructions
- Rinse and drain the spinach leaves, then dry with kitchen towel.
- Pour the oil in a frying pan, add the chilli and garlic and turn on the heat (the oil will then gently be infused with flavours).
- When the garlic begins to turn brown, add the spinach leaves - a handful at a time, after having stirred. Cover with lid and simmer for 2 minutes.
- Take the pan off the heat, rest for a couple of minutes. When the spinach is wilted, season to taste and stir through.
