Spring onion curry

Background
Spring onions, also called green onions, are extensively used in continental and Chinese dishes to enhance the flavor and taste of the dish. They combine the nutrients and health benefits of both onions and greens making it far more nutritious and beneficial for the body. This recipe of spring onion leaves is very simple and delicious.
Ingredients
- One bunch of spring onion leaves
- Β½ cup green lentils dehusked
- Salt to taste
- 2 tsp oil
- 2 Tbsp grated coconut
- Β½ tsp cumin seeds
- 4 red chilli
Instructions
- Wash the spring onions and leaves. Chop the white part of the onions and keep aside. Chop the leaves and the white part and keep them ready.
- Grind the red chilli, coconut and cumin seeds in a mixer to make fine powder.
- Cook the green gram lentils by adding little water. See that it is not overcooked.
- Heat oil in a pan, add chopped spring onion whites and greens along with a pinch of salt and stir fry for a minute.
- Add the cooked lentils and ground spice powder to the pan and give good mix. Keep in medium flame for 3-4 minutes.
- Yummy and healthy spring onion curry is now ready to serve with rice or roti.
