Steak with whisky and blue cheese

Background
If you have friends around for a BBQ or dinner party, this steak with whisky and blue cheese will be an excellent choice - particularly for the guys. Or you can have it as a midweek meal, served with green vegetables (kale, green beans or broccoli) or a simple green salad.
Ingredients
- 1 thick Sirloin steak (about 350g)
- 2 Tbsp of Whisky
- 1 clove garlic, minced
- 50g blue cheese (Roquefort or Stilton)
- 3 Tbsp Greek yogurt
- 2 Tbsp chopped chives
Instructions
- Rub the meat with the garlic and place on a plate.
- Pour over the whisky and, depending on the quality of the meat, marinate it for 20-120 minutes or overnight.
- Mash the cheese with a fork, then mix with the yoghurt and half of the chives. Set aside.
- Heat a griddle pan or barbecue.
- Season the meat, then cook the steak on both sides to your liking. 2-3 minutes per side will leave it medium - a little pink in the middle.
- Rest for a couple of minutes before serving.
- Serve with the cheese sauce & salad or greens and sprinkle with the remaining chives.
Tips
- If the steak is well matured you don't need to marinate it for as long.
- For party snacks slice the steak thinly and serve in buns or salad leaves with the cheese sauce drizzled over it.
