Stir-fried Mangetout and tofu

Background
This super easy stir-fried mangetout and tofu is vegan and gluten-free so itβs ideal for most diets. It can be served as a main (with rice or noodles) on busy days or fits well in a Chinese-style menu. If you want it to have a kick, serve it with some chilli slices or dried chilli flakes.
Ingredients
- Β½ large onion
- 2 cm ginger
- 1 clove of garlic
- 100g firm tofu
- 2 Tbsp vegetable or groundnut oil
- 100g mangetout
- 1 Tbsp soy sauce
- 1 Tbsp Shaoxing Rice Wine
- 1 tsp sesame seeds
- ½ tsp toasted sesame oil
- 1 chilli (optional)
Instructions
- Dry the tofu and cut it into 2cm cubes.
- Peel and thinly slice the onion, ginger and garlic.
- Heat half of the oil in a wok. When itβs smokey, add the tofu and stir-fry for a couple of minutes, until light brown an all sides. Transfer them to a plate, lined with paper kitchen towels.
- Wipe out the wok and heat the rest of the oil. When itβs smokey, add the the onion & ginger and stir-fry for 3 minutes.
- Add the garlic, stir for a minute, then add the mangetout.
- Add the soy sauce, rice wine and sesame seeds. Stir-fry for a couple of minutes, then add the sesame oil and tofu cubes. Combine gently and serve hot, while itβs sizzling (with some slice chilli scattered on top, if liked).
