Stir-fried miso courgette with beans
Background
This Japanese-style stir-fried miso courgette with beans is vegan, gluten & dairy-free, protein-rich & low-carb, healthy & filling - so ideal for most diets. It takes only 10 minutes to make! You can serve it as a main dish (with noodles, toast or dumplings) or a side dish (with grilled fish or meat).
Ingredients
- 1 small courgette, grated
- 1 tsp vegetable oil
- 1 garlic, minced
- 1 Tbsp Kikkoman soy sauce
- 1 Tbsp Mirin
- 1 tsp white miso paste
- Juice of ½ lime
- 1 tsp sesame oil
- 1 tin butter beans, drained
- 2 Tbsp chopped coriander leaves
- Freshly ground pepper
Instructions
- Heat the vegetable oil in a wok or in a pan. Add the garlic, stir for a few seconds, then add the courgette. Stir-fry for a minute, then add the soy sauce, mirin, miso and lime juice.
- Stir-fry for 30 seconds or so then add white beans and sesame oil and warm through.
- Stir in the coriander leaves and serve with freshly ground pepper.
