Stuffed brinjal and potato

Background
I was just browsing through some magazines for recipes and came across a recipe for stuffed brinjal. I added some more ingredients to it and made a mouth-watering recipe which is easy to make. It goes well with steamed rice or roti.
Ingredients
- 250g Brinjals, small
- 1 Potato, large
- For the stuffing:
- 1 Onion, roughly chopped
- 5 Garlic cloves, grated
- 1" Ginger, grated
- A sprig of coriander, chopped
- 1 tsp Turmeric
- 1 tsp Dry mango powder
- 1 tsp Red chilli powder
- Salt as required
- 1 Green chilli
- 1 tsp Oil
- For seasoning:
- 1 Tbsp Oil
- 1 tsp Cumin seeds
- A sprig of curry leaves
Instructions
- Cube the potatoes and set aside in water (so as not to blacken them).
- Heat oil in a deep bottomed vessel, add the cumin seeds and curry leaves and let them splutter.
- Add the potatoes and half cook them.
- In a separate pan,heat oil and fry onion and add all the rest of the ingredients under stuffing and fry taking care not to burn any dry powders.
- Let this cool down and grind into a smooth paste.
- Remove the stems from brinjal and wash them thouroughly.
- Slit them on the top in a cross and stuff them with the stuffing.
- Add these brinjals to the half cooked potatoes and cook under lid until the brinjals are cooked.
- Serve hot.
