Sweet potato fritters
Background
I just love these gluten-free sweet potato fritters! They're so easy to make and very versatile. So they are perfect for snacking during the day; or as nibbles with a glass of wine in the evening; or served with soups (instead of bread); or for lunch with poached egg and bacon (instead of potato hash) - and they're lovely cold too, so ideal for lunchboxes, picnics and trips.
Ingredients
- 150g coarsely grated sweet potato
- 6 Tbsp brown rice flour
- 2 eggs
- 1 clove garlic, minced
- 100g feta cheese, crumbled
- Β½ tsp dried chilli flakes or 1 medium chilli
- Oil to cook
Instructions
- If you use fresh chilli, deseed it and remove its vein then finely chop.
- In a mixing bowl, toss all the ingredients together then season to taste with salt and pepper.
- Form burger-sized patties between your palms and put them on a plate.
- Heat some oil in a wok or deep pan. Put the patties in the hot oil and cook for each side for 2-3 minutes until golden.
- Drain them on paper kitchen towels.
- Serve them at room temperature.
