Background
The other day I was in a trendy food store and almost bought a jar of tahini sauce. I checked the ingredients, then looked at a few recipes online and realised that it can be home-made very easily at a fraction of the price. This vegan, super-healthy sauce is perfect for falafels, salads, kebabs, burgers and so on -Β and it keeps well in the fridge for two weeks (in an airtight jar). If you like, you can spice it up a bit with chilli flakes, Harissa paste or a pinch of paprika/cayenne.
Ingredients
- 4 Tbsp tahini paste
- juice of 1 lemon
- Salt
- ΒΌ tsp garlic powder or 1 garlic clove, minced (optional)
- 4 Tbsp warm water (or chickpea cooking water) approx..
- chopped parsley, to garnish (optional)
Instructions
- In a small bowl whisk the tahini paste, salt, lemon juice and garlic (if used), adding a drop of water at a time until you have a creamy, pourable sauce.
- Taste it and adjust the seasonings/acidity to your liking.
- Keep it chilled until serving.
- Serve with chopped parsley scattered on top (optional).
