Tenderloin medallions in spiced BBQ sauce

Background
These tenderloin medallions in spiced BBQ sauce is super easy and tasty recipe so perfect for family meals, laidback dinner parties and so on. Serve it mashed potatoes, rice or baked sweet potatoes and a crispy salad.
Ingredients
- 1 pork tenderloin fillet
- 3 Tbsp BBQ sauce
- 1 Tbsp soy sauce
- 1 Tbsp tomato sauce or tomato purée
- 2 tsp rice vinegar
- 1 tsp grated ginger
- 1 tsp grated garlic
- 1 lime, juiced
- ½ tsp freshly ground pepper
- ½ chilli, sliced
- 3 spring onions, sliced
- Chopped coriander to serve
Instructions
- Cut the tenderloin fillet into 1 cm thick medallions. Put them in a dish.
- Mix the BBQ sauce, tomato sauce, rice vinegar, lime juice, grated ginger & garlic. Taste and add some honey if you think it’s too sour.
- Pour the mixture over the medallions and marinate for a couple of hours or even overnight.
- Preheat the oven to 180°C.
- Thinly slice the chilli and spring onions.
- Put the medallions in a baking dish, pour over the marinade, then season with black salt and pepper.
- Bake for 20- 25 minutes. After 15 minutes, turn over the medallions and scatter the spring onion and chilli slices over them.
- Serve with chopped coriander scattered on top.
