Teriyaki shiitake and edamame beans salad

Background
This teriyaki shiitake and edamame beans salad is super easy to make. Itβs vegan, healthy and can easily be gluten-free if suitable soy sauce is used. You can serve this dish warm or at room temperature.
Ingredients
- 50g shiitake mushrooms
- 4 spring onions
- 2cm piece ginger
- Β½ teaspoon chilli flakes
- 1 garlic clove, minced ( optional)
- 1 cup edamame beans
- 2 Tbsp Teriyaki sauce
- 1 Tbsp Kikkoman soy sauce
- 1 tsp rice vinegar or lime juice
- 1 Tbsp oil
- 1 Tbsp sesame oil
- 1 tsp sesame seeds
Instructions
- Chop the ginger, spring onions and shiitake.
- Heat the oil in a frying pan, then stir-fry the ginger and spring onions for a minute. Add the shiitake, garlic and chilli flakes, then stir-fry for a minute.
- Add the teriyaki sauce, soy sauce and rice vinegar or lime juice. Cook for 5 minutes under a lid, then add the edamame beans and simmer for another 5 minutes. Stir in the sesame oil.
- Taste and season to your liking.
- Serve, garnished with sesame seeds.
