Tofu and Courgette Fritters

Background
These Tofu and Courgette Fritters make lovely nibbles for a party or picnic - alternatively they are excellent snacks during the day or perfect for a light lunch (with aΒ bowl of soup or a plate of mixed salad). Serve it with chilli sauce or some soy sauce.
Ingredients
- 100g courgette
- 100g tofu
- 1 egg
- 3 Tbsp rice or gram flour
- 1tsp soya sauce
- To serve: soy sauce
Instructions
- Coarsely grate the courgette. Whisk the egg lightly.
- Drain the tofu and crumble it into a bowl. Add the soy sauce, flour and egg and combine.
- Heat some oil in a wok or frying pan. Add dollops of the mixture, and flatten them slightly with your spoon.
- After a couple of minutes turn them over and cook for another couple of minutes until golden.
- Drain the fritters on paper kitchen towels. Serve lukewarm, drizzled with soy sauce.
