Tofu and Courgette Fritters

Background

These Tofu and Courgette Fritters make lovely nibbles for a party or picnic - alternatively they are excellent snacks during the day or perfect for a light lunch (with a bowl of soup or a plate of mixed salad). Serve it with chilli sauce or some soy sauce.

Ingredients

100g courgette
100g tofu
1 egg
3 Tbsp rice or gram flour
1tsp soya sauce
To serve: soy sauce

Instructions

Coarsely grate the courgette. Whisk the egg lightly.
Drain the tofu and crumble it into a bowl. Add the soy sauce, flour and egg and combine.
Heat some oil in a wok or frying pan. Add dollops of the mixture, and flatten them slightly with your spoon.
After a couple of minutes turn them over and cook for another couple of minutes until golden.
Drain the fritters on paper kitchen towels. Serve lukewarm, drizzled with soy sauce.
