Background
This tomato and edamame salad goes well with Japanese-style grilled fish, meat or tofu. It only takes 5 minutes to make. It’s vegan, healthy and really tasty too!
Ingredients
- 150g mixed tomatoes
- 3 or 4 spring onions
- 1 cup frozen edamame beans
- 1 Tbsp Kikkoman soy sauce
- 1/ 2 tsp toasted sesame oil
- 1 tsp rapeseed oil
- 1 Tbsp rice wine vinegar
- Pinch of palm sugar
- ½ tsp sesame seed
- Lime juice
Instructions
- Steam or blanch the beans until tender, then rinse under cold water. Drain and put the beans in a serving bowl.
- Thinly slice the spring onions and cut the tomatoes in half, then add these to the beans.
- Whisk the soy sauce, rice wine vinegar, oils and sugar, then pour it over the beans. Add some lime juice and mix well. Taste and adjust it to your liking.
- Pour this mixture over the vegetables and toss. Scatter the sesame seeds on top.
- Let it rest for a few minutes before serving.
