Tomato Bruschetta

Background
Bruschetta is an Italian antipasto that has become very popular all around the world. This is the basic tomato version that's perfect as a snack or an appetizer at parties.
Ingredients
- 1 loaf of rustic or sourdough bread (flute or loaf)
- 1 clove of garlic
- Olive oil
- For the topping:
- 3 small, ripe tomatoes
- 1 small red onion
- 2 Tbsp chopped basil
- 1 Tbsp olive oil
Instructions
- Cut the tomatoes in half, then remove the seeds. Chop the flesh finely.
- Chop the onion and basil finely.
- Combine everything in a mixing bowl, season to taste, set aside.
- Cut the bread into 1 cm slices. Grill, barbecue or toast them on both sides until brown.
- Rub the garlic over one side of the toasts then brush lightly with oil.
- Top with a spoonful of the tomato mixture. Serve.
