Tomato, cucumber and halloumi salad

Background
This is a lovely salad with an Asian twist that can be made in just 10 minutes. Perfect for an easy-going lunch or ideal for a picnic. Eat it with pita or a crusty roll.
Ingredients
- Half a cucumber
- 200g ripe tomatoes
- 250g halloumi
- Dressing:
- 2 Tbsp chopped mint leaves
- ½ green chillie
- ½ Tbsp Thai fish sauce
- ½ Tbsp rice wine
- 2 Tbsp olive oil
Instructions
- Wash and cut the tomatoes into eight segments.
- Cut the cucumber in half lengthwise, scrape out the seeds, then slice thinly .
- Deseed the chilli, remove the vein, then slice the flesh into thin strips.
- Mix the dressing in a bowl.
- Wipe the cheese with paper towel and cut into 1 cm slices.
- Heat the oil in a frying pan and fry the cheese on both sides until light brown.
- Transfer onto a plate, cool slightly and cut into bite-sized pieces.
- In a large bowl mix the tomatoes, cucumbers and grilled cheese with the dressing. Season and toss well.
- Serve with some mint leaves scattered on top.
