
Background
For summer barbecues, parties and picnics we all need some simple salad recipes. This tomato, onion and caper salad is ready within 10 minutes, and it goes really well with barbecued and grilled meat and fish. Also, it is an ideal filling for burgers, wraps and sandwiches.
Ingredients
- 250g ripe tomatoes on the vine
- 1 red onion
- 1 Tbsp capers, drained
- 2 Tbsp olive oil
- 2 Tbsp red wine vinegar
- 1 tsp unrefined sugar
Instructions
- Cut the onion in half, then slice it very finely.
- Slice the tomatoes into rings and lay them in a serving dish.
- Scatter the onion and capers over the tomatoes.
- Mix the vinegar with the sugar, then add the oil. Pour this over the salad and toss.
- Set aside for at least 10 minutes before serving.
Tips
You can scatter some fresh herbs on the top, depending on your mains (such as parsley, mint, basil, coriander, oregano)© 2025 Copyright CookTogether
