Tortellini with sauteed green peas and peas

Background
For this recipe you can use shop-bought or home-made tortellini, with stuffing of your choice. I used vegan, “no chorizo” filling that had sundried tomatoes, smoked paprika and red chilli in it.
Ingredients
- 250g tortellini (can be vegan)
- 1 Tbsp olive oil
- 1 shallot onion
- 2 cloves of garlic
- 100g green peas
- 100g green beans
- 1 tsp vegetable stock
- ½ glass water
- 1 handful mint leaves
- 1 tsp white wine vinegar or juice of ½ lemon
Instructions
- Thinly slice the onion and garlic.
- Heat the oil in a frying pan, the gently sauté the onion and garlic for 5 minutes.
- Add the beans, peas, stock powder, vinegar and water.
- Put a lid on and cook for 5 minutes over low heat or until the veggies are tender.
- Turn off the heat, keep the lid on and rest.
- Heat a pan of water. When it’s boiling add the tortellini and cook for about 2 minutes - when they float to the surface, they are ready to take out with a slotted spoon.
- Serve the sautéed greens, then arrange the drained tortellini on top. Scatter some mint leaves on top and serve with freshly ground pepper.
