Vegan apple and ginger pancakes

Background
These vegan apple and ginger pancakes are healthy, filling and super yummy. Perfect for an autumnal breakfast or brunch, served with maple syrup or apple compote. I love snacking on them during the day.
Ingredients
- 1 apple
- 1 cup self-raising wholewheat flour
- Β½ cup ground almond
- Β½ tsp cinnamon powder
- 1 tsp ginger powder
- 2 Tbsp coconut sugar
- 1 cup almond milk (approx.)
- 1 flax egg or 1 tsp egg replacer powder mixt with1 Tbsp water
Instructions
- First mix together the flax egg or the paste using egg replace powder. Set aside.
- Grate the apple and mix with the rest of the ingredients, adding the milk gradually, until you get a thick pancake batter.
- Stir in the egg paste. If time allows Set aside for 10 minutes to rest.
- You should have a thick mixture now. Add a teaspoon of oil to the batter.
- Lightly grease, then heat a heavy pancake pan. Add about five dollops of the batter to the pan, spreading them out into circular shapes.
- Cook them for a couple of minutes, then carefully flip them over and cook for another minute or so.
- Transfer the pancakes to a plate. Make another batch using up the remaining batter.
- Serve with maple syrup and seeds/nuts on the side.
