Vegan apple and out bars

Background
These vegan apple and out bars can easily be gluten-free if you use appropriate flour and oats. They are perfect for breakfast, Β afternoon tea, picnics and trips.
Ingredients
- FOR BASE:
- 1 cup oats (gluten-free, if needed)
- 1 cup self-rasing flour (gluten-free, if needed)
- 1 teaspoon cinnamon
- 1 teaspoon baking powder
- 2 Tbsp oil
- 2 bananas, mashed
- 2 Tbsp muscovado sugar
- Β½ cup oat milk
- FOR FILLING:
- 2 Granny Smith apples
- 2 Tbsp flour (gluten-free, if needed)
- 2 Tbsps muscovado sugar
- 1 teaspoon cinnamon
- 2 Tbsp mixed raisins and cranberries (optional)
- FOR TOPPING:
- Β½ cup walnuts, finely chopped
- Β½ cup flour (gluten-free, if needed)
- Β½ cup oats (gluten-free, if needed)
- 2 Tbsps muscovado sugar or date syrup
- 1 teaspoon ground cinnamon
- 3 Tbsps dairy-free margarin
Instructions
- Preheat the oven to 180C and line a medium, deep baking tray with parchment paper.
- In a mixing bowl, mix together the dry ingredients for the base. Add the oil and milk and mix well.
- Press the batter into the lined baking dish and put in the fridge to cool.
- Next, make the apple filling. Peel, core, then thinly slice the apples. Put them in a mixing bowl. Sprinkle over the flour, sugar and cinnamon and mix gently until the apples are well coated. Set aside.
- In another mixing bowl, stir together the chopped walnuts, flour, oats, sugar and cinnamon. Add the margarine and, using your hands, rub everything together until you get a mixture, resembling breadcrumbs. Set aside.
- Take the dish out of the fridge, and arrange the apple slices evenly on top of the base. Scatter some raisins over the apple slices, if used.
- Scatter the crumble over the filling, then gently press it down to stick to the apples.
- Bake in the middle of the oven for 30- 35 minutes, until golden brown.
- Allow it to cool completely before you remove it from the tray. Cut it into bars.
