Vegan chestnut and mincemeat stars

Background
These vegan chestnut and mincemeat stars are lovely snacks during the Christmas holidays. You can use ready-made mincemeat or just mix 1 Tbsp of brandy with dried cranberries, orange peel and raisins (1 Tbsp of each) and you’re ready to go.
Ingredients
- 2 cups of self raising flour (gluten-free works too)
- 1 tsp baking powder
- 2 Tbsp dairy-free spread
- 1/ 2 cup muscovado sugar
- 1 tsp cinnamon or mixed spice
- ¾ cup plant-based milk
- 3 Tbsp good quality mincemeat
- 1 cup roasted and peeled chestnut
Instructions
- Put the chestnuts into a small food processor and whiz until you get fine crumble.
- Mix the flour and baking powder in a large bowl. Add the margarine/spread and rub it with your fingers until the mixture resembles breadcrumbs. Add the sugar, chestnut and cinnamon, then combine with a palette knife.
- Slowly and gradually add the milk, mixing with the palette knife to make a dough.
- Carefully fold in the mincemeat and create a ball. Rest this in the fridge for an hour or so. (It can be frozen too for later use!).
- Set the oven temperature to 190°C. Line a baking tray with parchment paper.
- Roll the dough out between two large baking sheets into 2cm thickness. Using a cookie cutter, stamp out star shapes. Put these onto a lined baking tray.
- Bake for 10-15 minutes or until they have risen and light brown.
- Check their base, if they’re cooked through. If they are ready, move them to wire rack to cool.
- Dust them with icing sugar just before serving.
