Vegan chocolate and hazelnut oat cookies

Background
Chocolate and hazelnut is a classic combo so itβs no wonder these vegan chocolate and hazelnut oat cookies are super yummy. They are sugar-free and fat-free too as the bananas provide enough oil and moisture for the baking. If youβd prefer a more intense flavour, dry-fry or roast the hazelnuts for a few minutes, before chopping them. The cookies are perfect with morning coffee or as snacks during the day.
Ingredients
- 3 small or 2 large ripe bananas
- 1 cup rolled oats ( gluten-free if needed)
- 3 Tbsp of cocoa powder
- Β½ cup chopped hazelnuts
- Β½ tsp ground cinnamon (optional)
- 1 tsp vanilla paste or extract
Instructions
- Mash the bananas with a fork or process them in a small blender.
- Add the other ingredients and combine until you get a malleable mixture ( you might need to add more oats). Let it rest for 10 minutes.
- Turn the oven on to 180Β°C and line a baking tray with parchment paper.
- Make 6-8 equal sized balls from the mixture, then press them slightly between your palms.
- Put the cookies on the prepared baking tray.
- Bake in the middle of the oven for about 10-15 minutes until golden.
- Cool the cookies on a wire-rack then serve.
