Vegan Christmas banana bread

Background
Mincemeat can be used for many treats not just mince pies! This Vegan Christmas banana bread is perfect for Christmas breakfast or afternoon tea. You can make this cake with gluten-free flour too. Do use good quality (vegan) mincemeat. See mincemeat recipes here>>
Ingredients
- 3 bananas
- 1 cup coconut milk
- 1 Tbsp ground flaxseeds
- 1 tsp mixed spice
- 1 tsp cinnamon
- ½ cup mixed peel
- 1 cup mincemeat
- 1 tsp vanilla essence
- ½ cup melted margarine or coconut oil
- 2 Tbsp maple syrup
- 2 cups of flour (gluten-free, if needed)
- 1 tsp bicarbonate of soda
- 75g chopped chestnuts (vacuumed packed)
- Icing sugar or icing
Instructions
- Mix the coconut milk with the flaxseeds. Set aside.
- Preheat the oven to 160°C. Line a loaf tin with parchment paper or paper basket.
- Mash the bananas with a fork, then add mixed spice, cinnamon, mincemeat and mixed peel. Stir in the vanilla, maple syrup and oil.
- Add the flour and bicarb. Mix well. Then pour in half of the milk. Gently stir and add more gradually - enough to get a thick batter. Fold in the chopped chestnuts.
- Transfer the batter into the prepared tin, spreading it out evenly.
- Bake the cake in the middle of the oven for approx. 60 minutes until golden and an inserted skewer comes out clean.
- Let it cool in the tin for 5 minutes, then transfer it to a wire rack to cool completely.
- When it’s completely cool, dust with icing sugar. Alternatively mix some icing sugar with little orange juice and pour the paste over the cake. Let it set and serve.
