Vegan creamy spaghetti

Background
This vegan creamy spaghetti is ready in just 15 minutes. I used “Camembert”-like cheese but other, strong plant-based cheese would work too. You can make this dish with other type of pasta - gluten-free versions work well too.
Ingredients
- 200g spaghetti
- 1 garlic
- 1 Tbsp olive oil
- 3 Tbsp vegan crème cheese
- 50g plant-based blue cheese or Camembert
- 1 handful walnuts, chopped
- ½ Lemon zest and juice
Instructions
- Cook the pasta according to the packet’s instructions.
- Meanwhile, cut the garlic into thin slices then saute in the olive oil until light brown. Add a couple of spoons of the pasta's cooking water.
- Put the pasta back into the pan, add garlic, the cream cheese, lemon zest and some cooking water. Crumble the blue cheese on top, then scatter the walnut over it. Combine well.
- Taste and season with salt and pepper. Add some lemon juice, if needed.
- Toss until well combined.
