Vegan fig and walnut crumble
Background
This vegan fig and walnut crumble can be gluten-free too if appropriate oat and flour are used. Figs don’t release much juice during cooking, so we need to add some fruit juice to the base- such as cherry, cranberry, apple, prune juice - or compote, tinned fruit syrup would work too. ( I used prune juice). Serve it with vegan vanilla custard, yogurt or ice-cream. It’s a lovely dessert for a relaxed Sunday lunch!
Ingredients
- 6 ripe figs
- ½ cup fruit juice
- 1 tsp cinnamon powder
- 1 handful walnuts, chopped
- 1 Tbsp muscovado sugar
- For the crumble
- 1 cup (gluten-free) porridge oats
- ½ cup (gluten-free) flour
- 50g dairy- free spread
- ½ cup ground walnuts
- 2 or 3 muscovado sugar
Instructions
- Preheat the oven to 180°C.
- Cut the figs into thin circles, then lay them in a baking dish, overlapping each other. Pour over the juice or syrup, then scatter the sugar, chopped walnuts and half of the cinnamon over them.
- Put the flour, ground walnut, cinnamon and oat in a mixing bowl, then add the spread. Using your fingers, rub them together to make a breadcrumb texture. Add the sugar and combine.
- Sprinkle the mixture over the figs evenly, then press the mixture down with the base of a spoon.
- Bake in the oven for 20-25 minutes until golden.
- Serve with vegan vanilla custard or ice-cream.
