Vegan oat bar cookies
Background
These vegan oat bar cookies are really healthy - they're gluten-free, sugar-free, dairy-free, egg-free and fat-free - yet absolutely delicious! They are just like oat or muesli bars in cookie format (which takes less time to bake!).You can eat them lukewarm for breakfast or let them cool Β for snacking during the day.
Ingredients
- 3 small or 2 large ripe bananas
- 1 large apple, grated
- 1.5 cup rolled oats
- Β½ tsp ground cinnamon
- Β½ tsp mixed spice
- 3 Tbsp mixed seeds and dried fruits
- 1 tsp rapeseed oil
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, grated apple and spices. Mix well. Add more oats if needed. Youβll need to have a thick but malleable dough. Let it rest until the oven warms up.
- Turn the oven temperature to 180Β°C.Line a baking tray with parchment paper.
- Make equal sized balls from the mixture and flatten these slightly between your palms.
- Put them on a baking tray, then bake in the oven for about 15- 20 minutes until golden.
- Let them cool in the tray for 5 minutes, them move them to a wire rack.
