Vegan sweet potato fritters

Background
These vegan sweet potato fritters are really easy to make, particularly if you have a spiralizer (if you don’t just use cheese grater or shredder). They are perfect for snacking during the day or you can serve them as nibbles with aperitif.
Ingredients
- 1 sweet potato, spiralised or grated
- 1 Tbsp chickpea flour
- 1 Tbsp cold water
- 1 clove of garlic, minced
- ½ tsp ground cumin
- ½ tsp ground coriander
- ½ tsp paprika
- ¼ tsp turmeric
- Pinch of chilli powder (or more to taste)
- 1 Tbsp chopped coriander leaves
- Oil to cook
- To serve: 2 spring onions, finely chopped
Instructions
- Mix the sweet potato with all the other ingredients. You should get sticky mixture.
- Heat some oil in wok or frying pan. When the oil is hot, add small spoonfuls of the mixture, flatting them slightly with the base of the spoon.
- Fry for a minute or so, then turn them over and fry until golden and crispy.
- Drain them on paper kitchen towels.
- Baked version: Preheat the oven to 200°C. Line a baking tray with baking paper.
- Add dollops of the mixture, then flatten them slightly with the spoon. Spray each with a little oil, then bake them for 10 minutes or so until crispy and golden.
- Serve the fritters warm or at room temperature.
