Vegetable kurma with couscous

Background
Vegetable kurma made with couscous - you might think what a combination, but it really turned out to be a very delicious dish! It was an accidental discovery but a very good one.
Ingredients
- 2 cups Vegetables (carrots, beans,peas,corn,potato etc , cut into small pieces)
- ¼ Coconut, grated
- 1 Onion, chopped
- 1 Tbsp Poppy seeds, dry roasted
- 1 Tbsp couscous
- 1 Green chilli, slit
- 1 tsp Turmeric
- 2 tsp Chilli powder
- Salt as required
- 1 Tbsp Oil
- 1 Tbsp Ginger garlic paste
Instructions
- This recipe can be cooked in a pressure cooker or can be cooked in a pan under a lid. When cooking in a vessel, cook the vegetables until soft and tender.
- In a pressure cooker, heat the oil and add the onion, and fry until brown.
- Add the turmeric, green chilli and ginger garlic paste and fry for couple of minutes.
- Meanwhile, grind together the grated coconut, poppy seeds and couscous adding little water until smooth paste.
- Add the vegetables to the fried onions and mix.
- Add the coconut paste, chilli powder and ½ cup water to the vegetables with salt.
- Pressure cook according to the specifications of your pressure cooker until the vegetables are soft.
- Serve hot.
