Warm courgette salad with thyme

Background
This courgette salad with thyme goes well with grilled or fried meat. Also, you can use it as filling in a burger or a sandwich.
Ingredients
- 1 medium courgette
- 1 Tbsp olive oil
- Juice of Β½ lemon
- 1 cloves of garlic (chopped)
- Β½ handful of thyme leaves
- Salt & pepper
- Thyme leaves to garnish
Instructions
- Using a vegetable peeler, slice the courgette into long, thin strips.
- Heat the oil in a pan, add the garlic and thyme for about 1 minute until the garlic is light brown.
- Add the lemon juice, let it bubble then add the courgette strips.
- Simmer under cover for about 5 minutes Be careful not to burn it - it is ready when the lemon juice is absorbed!
- Season to taste and sprinkle with fresh thyme.
- Serve warm or at room temperature.
Tips
