Warm courgette salad with thyme

Background

This courgette salad with thyme goes well with grilled or fried meat. Also, you can use it as filling in a burger or a sandwich.

Ingredients

1 medium courgette
1 Tbsp olive oil
Juice of ½ lemon
1 cloves of garlic (chopped)
½ handful of thyme leaves
Salt & pepper
Thyme leaves to garnish

Instructions

Using a vegetable peeler, slice the courgette into long, thin strips.
Heat the oil in a pan, add the garlic and thyme for about 1 minute until the garlic is light brown.
Add the lemon juice, let it bubble then add the courgette strips.
Simmer under cover for about 5 minutes Be careful not to burn it - it is ready when the lemon juice is absorbed!
Season to taste and sprinkle with fresh thyme.
Serve warm or at room temperature.

Tips

To make it spicy fry some dried chili flakes with the garlic & thyme!
