Background
This watercress, tomato and feta salad can be thrown together in a couple of minutes so it's ideal for quick lunches, barbecue parties, picnics and so on. You can use goat's cheese too, instead of feta.
Ingredients
- 8 small tomatoes (preferably on the vine)
- 50g feta cheese
- 50g black olives (pitted)
- 50g watercress
- 2 Tbsp olive oil
- 1 Tbsp balsamic vinegar
Instructions
- Cut the tomatoes in half.
- Cut the cheese into 2 cm thick cubes.
- Scatter the watercress in a serving bowl. Add the tomatoes, olives and feta
- Season with salt and pepper, drizzle with the oil and balsamic vinegar.
