Background

This watercress, tomato and feta salad can be thrown together in a couple of minutes so it's ideal for quick lunches, barbecue parties, picnics and so on. You can use goat's cheese too, instead of feta.

Ingredients

8 small tomatoes (preferably on the vine)
50g feta cheese
50g black olives (pitted)
50g watercress
2 Tbsp olive oil
1 Tbsp balsamic vinegar

Instructions

Cut the tomatoes in half.
Cut the cheese into 2 cm thick cubes.
Scatter the watercress in a serving bowl. Add the tomatoes, olives and feta
Season with salt and pepper, drizzle with the oil and balsamic vinegar.
