Background
This yogurt dessert with pomegranate is one of my favourite healthy desserts during the festivities because I can add nuts or crumbled cookies to it according to the occasion. Iβve made this one with maple syrup and mint, but Β you can make it with honey and add Β crushed pistachios, walnuts, pumpkin seeds or crumbled Amaretti cookies, gingerbread biscuits and so on. This simple version is perfect for breakfast or brunch too!
Ingredients
- 1 cup of Greek yoghurt
- 1 Tbsp maple syrup or runny honey
- 2 Tbsp pomegranate seeds
- About 1 tsp pomegranate molasses
- 1 tsp baby mint leaves
Instructions
- Whisk the yogurt together with the maple syrup or honey until light and fluffy.
- Mix in half of the pomegranate seeds, then drizzle the top with some pomegranate molasses and swirl this through the yoghurt with a toothpick.
- Scatter the remaining pomegranate seeds and some mint leaves on the top, then serve.
