Background
I love having soup in the summer - on very hot days I find some chilled soup very cooling and refreshing, whilst on breezy days itβs so lovely to snuggle up with a mug of hot & uplifting soup! My absolute favourite summer soup is Green pea soup Β because most versions can be served cold or hot and they make you feel wonderfully refreshed! This zesty pea soup is made with Β mint, dill and lemon - so itβs zingy, cooling and energising! You can some chilli to it too, if you want it to have a kick. Itβs absolutely delicious and, most importantly, ready in just 15 minutes!
Ingredients
- 1 Tbsp olive oil
- 1 large onion
- 1 garlic clove, minced
- 500g peas (fresh or frozen)
- 500 ml vegetable or chicken stock
- 1 small handful of mint leaves
- 1 small handful dill
- 1 lemon, zest and juice
- Chilli flakes to serve (optional)
Instructions
- Finely chop the onion. Heat the oil in a sauce pan, and gently sweat the onion and garlic over a low heat for about 8-10 minutes, stirring regularly.
- Add the peas and stock to the pan, bring to the boil, then gently simmer for 5 minutes.
- Turn the heat off, add the mint and dill, then blend using a hand-held blender or liquidiser. When itβs smooth and velvety, stir in the lemon zest and squeeze in some lemon juice to your liking.
- Serve warm or cold.
