New potato salad with stilton

Background

This new potato salad with stilton goes really well with barbecued or grilled steak. The salad can be eaten warm or at room temperature so it's ideal for parties and picnics too. It only takes 15 minutes to make!

Ingredients

1 kg baby new potatoes
1 bunch spring onions
2 lemons, juiced
1 Tbsp olive oil
1 tsp honey
2 Tbsp chopped parsley
100g Stilton (approx.)
To garnish: watercress or parsley

Instructions

Rub the dirt off the potatoes then cook them in lightly salted water - it takes about 10-15 minutes.
Meanwhile, chop the spring onions, parsley then blend with the honey, lemon juice and oil in a small food processor until you gate a textured paste.
Drain the cooked potatoes and put them in a serving dish. Pour on the sauce and crumble the cheese on top. Add the parsley or watercress. Season to taste and toss.
