Background

This simple tomato, radish and mozzarella salad is just perfect for summer lunches, picnics and parties. It can be made in just a few minutes and in advance of an event.

Ingredients

1 handful radishes
1 stalk celery
2 ripe tomatoes, sliced in half
3 spring onions
1 mozzarella ball
2 Tbsp extra-virgin olive oil
juice of ½ lemon or 1Tbsp balsamic vinegar
Sea salt and freshly ground black pepper
Basil leaves

Instructions

Trim then slice the radishes very thinly. Slice the celery and spring onions.
Drain, dry and tear the mozzarella into small pieces.
Toss together the radishes, celery, tomatoes, green onions and mozzarella in a serving bowl. Drizzle with the olive oil and lemon juice/vinegar and season with salt & pepper.
Garnish with basil leaves just before serving.
