Background
This simple tomato, radish and mozzarella salad is just perfect for summer lunches, picnics and parties. It can be made in just a few minutes and in advance of an event.
Ingredients
- 1 handful radishes
- 1 stalk celery
- 2 ripe tomatoes, sliced in half
- 3 spring onions
- 1 mozzarella ball
- 2 Tbsp extra-virgin olive oil
- juice of ½ lemon or 1Tbsp balsamic vinegar
- Sea salt and freshly ground black pepper
- Basil leaves
Instructions
- Trim then slice the radishes very thinly. Slice the celery and spring onions.
- Drain, dry and tear the mozzarella into small pieces.
- Toss together the radishes, celery, tomatoes, green onions and mozzarella in a serving bowl. Drizzle with the olive oil and lemon juice/vinegar and season with salt & pepper.
- Garnish with basil leaves just before serving.
