Amaranth Leaves Stir-Fry

Background
My family is fond of any green leafy vegetables, so I make sure to make them at least thrice a week. These can be added to lentils or can be made as curry with tomato or potato. This dish is very easy to make and is also very healthy.
Ingredients
- 3 cups amaranth leaves
- 1 medium size onion
- 2 green chillies
- 2 red chillies
- 1 tsp split black gram
- 4 garlic cloves (chopped)
- Β½ tsp cumin seeds
- salt to taste
- 1 Tbsp oil
- 1 tsp split chickpeas
Instructions
- Wash the amaranth leaves and chop them. Keep aside.
- Take deep bottomed pan and add oil. To the oil, add the split black gram, split chickpeas, cumin seeds and red chillies. Fry for 2-3 min.
- Add the leaves , salt and green chillies. Cover the pan with lid. Water oozes out and keep the lid until the leaves are cooked.
- Once the leaves are cooked, remove the lid and fry until the excess water evaporates.
- Serve hot with roti or rice and ghee.
