Apple and blackberry oat bars

Background
These apple and blackberry oat bars are vegan, sugar-free, low-fat and gluten-free if appropriate oats are used. Serve them with you breakfast coffee or afternoon tea -Β they are ideal snacks throughout the day too or take them with you in your lunch box and for picnics, trips as a treat.
Ingredients
- 2 cups oat
- 2 bananas
- 2 Tbsp vegetable oil
- 1 apple grated
- 1 tsp cinnamon powder
- Β½ cup chopped nuts
- 1 handful blackberries, chopped
Instructions
- Heat the oven to 180Β°C. Line a small (22x22cm) baking tin with parchment paper.
- In a mixing bowl, mash the bananas with a fork. Add the cinnamon, grated apple, oats, nuts and the oil. Mix until you get a thick mixture but not a dough. Add the chopped blackberries.
- Transfer the mixture to the tin, spreading it out evenly, then bake for 25 minutes.
- Leave it to cool in the tin for 5 minutes, then transfer it to a wire rack and let it cool completely.
- Cut it into bars or squares.
- Store the slices in a cake tin.
