Apple and cinnamon traybake
Background
In Hungary we eat lots of apples during harvest - in fact most people who live in the countryside have at least one apple tree in their garden. This apple and cinnamon traybake is a family favorite, I make it regularly because it's so simple and so..o..o..o yummy. Instead of cinnamon I sometimes use ginger-bread spice mixture which makes is taste a bit Christmassy. To make it a bit more healthy I use wholemeal flour and unrefined sugar - you can experiment with gluten-free flour mixtures too!
Ingredients
- 1 kg apples
- 1 cup flour
- ½ cup unrefined sugar
- 1 tsp baking powder
- 1 pack vanilla sugar
- 2 tsp cinnamon
- 3 eggs
- ½ cup vegetable oil
Instructions
- Preheat the oven to 200°C. Grease and line a baking tin.
- Sieve the flour, baking powder and cinnamon into a bowl.
- Peel the apples, then grate them using a coarse cheese grater.
- Separate the eggs.
- Mix the egg yolks with the sugar, grated apple and oil.
- Beat the egg whites until you get peaky foams, then gently stir in the apple mixture. Transfer the batter into the baking tin, and spread it out evenly.
- Bake for about 45 minutes. When it's golden brown and the sides come away from the walls of the tin, the cake is ready.
- Allow it to cool in the tin, then slice it into cubes. Before serving dust it with icing sugar mixed with cinnamon.
