Apple and cranberry oat cookies

Background
These vegan apple and cranberries oat cookies are perfect for breakfast, mid-morning snack or with afternoon tea. They have no sugar, no flour, no eggs, no dairy β yet really nice and moist (and sweet enough!) You can make them with gluten-free oats too.
Ingredients
- 2 ripe bananas
- 1 green apple, grated
- 1 cup oats (gluten-free if needed)
- 1 tsp ground cinnamon
- 1 tsp vanilla paste
- 2 Tbsp chopped walnuts (or other nut & seeds)
- 1 Tbsp oil
- 2 Tbsp dried cranberries
Instructions
- Mash the bananas with a fork or blend them in a blender.
- Add the oats, cinnamon, vanilla and grated apple, then mix well.
- Let the mixture rest for a few minutes. Meanwhile, set the oven to 180Β°C and line a baking tray with parchment paper.
- Add the cranberries and chopped nuts to the oat mixture and combine gently. If itβs too thick, add some apple juice or plant-based milk.
- Using your hands, make equal sized balls, then press them between your palms. Place them on the prepared baking tray.
- Bake in the oven for approx. 15 minutes until golden.
- Serve the cookies at room temperature.
