Background
The topping of this apple and walnut crumble is made with oats, which makes it a bit more granola-like, when it's baked. You can use gluten-free oats, if needed, and dairy-free spread for a vegan or milk-free version. Serve it with custard, crème fraîche or plant-based vanilla yogurt/cream.
Ingredients
- 3 green cooking apples
- Juice of ½ lemon
- ½ cup sultanas
- 1 handful chopped walnuts
- 75g unrefined muscovado sugar
- ½ cup ground walnuts
- 2 tsp cinnamon
- ½ cup flour (gluten-free, if needed)
- 1.5 rolled oats (gluten-free, if needed)
- 75g butter or dairy-free spread
Instructions
- Preheat the oven to 180°C.
- Peel and core the apples, then chop them into bite-sized chunks.
- Arrange the apple pieces in baking dish, scatter the walnuts and sultanas on top, then squeeze the lemon juice over. Dust with half of the sugar and cinnamon.
- Mix the flour, oats, ground walnuts and remaining sugar& cinnamon in a bowl.
- Rub the butter/spread with the mixture until you get a coarse crumble.
- Cover the apples evenly with the crumble mixture, then slightly press down the top with a spoon.
- Bake for 20-25 minutes until the top is golden and crispy.
- Serve it warm.
