Background
Apple & pear is a classic fruit combo during the autumn & winter months so no wonder these muffins work well too - they are lovely and sweet yet don't have much sugar. Kids just love them!
Ingredients
- 200 ml milk (or dairy-free milk)
- 2 medium eggs
- 100 ml vegetable oil
- 100g light brown sugar
- 300g self-raising flour
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 2 apples
- 2 pears
- Maple syrup (optional)
Instructions
- Preheat the oven to 200Β°C. Line a muffin tin with paper muffin cases.
- Sift the flour, cinnamon and ginger together.
- In another bowl mix the eggs, milk, oil and sugar.
- Peel and core the fruits, then dice the flesh into small pieces.
- Add the fruits to the flour, gently stir through, then add the egg mixture. Strir well.
- Fill the muffin cases two thirds full with the batter and bake in the oven for about 25 minutes until golden brown.
- Move them onto a wire rack.
- When the muffins are still warm, prick them on the top several times with a skewer, and spoon over some maple syrup.
- Allow them to cool.
