Background
Most supermarkets and delis sell marinated grilled artichokes. I always have a jar in my pantry or a pot in the fridge, as they are very useful to make quick salads or pasta dishes. This artichoke and radish salad is perfect for summer BBQs and weekend lunches.
Ingredients
- 8 marinated grilled artichoke pieces
- 5 radishes
- 4 salad onions
- ½ red pepper or grilled pepper
- Olive oil
- Rice or cider vinegar
- 1 garlic clove, minced, optional
Instructions
- Put the artichoke pieces in a serving bowl.
- Cut the radishes into quarters, the salad onions into slices. Finely chop the red pepper.
- Add some olive oil or the marinade from the artichoke jar and some vinegar.
- You can also add a garlic clove minced, if liked.
- Taste and adjust the vinegar, and seasoning to your liking.
