Asian style tenderloin medallions

Background
These Asian- style tenderloin medallions can be baked, griddled or barbecued, so it's a perfect dish all year round, particularly when you have friend over for a meal. It’s actually incredibly easy to make; the secret is to use good quality pork fillet and to marinate for at least an hour! Serve it with salad and rice or flat bread.
Ingredients
- 1 pork tenderloin fillet
- 1 Tbsp soya sauce
- 1 tsp grated ginger
- 1 tsp grated garlic
- 2 tsp toasted sesame oil
- 1 Tbsp honey
- Freshly ground pepper
- 3 spring onions, chopped
- Chopped coriander to serve
Instructions
- Cut the fillet into 1 cm thick medallions.
- Mix the soya sauce, ginger, garlic, honey and sesame oil then pour over the medallions.
- Marinate for a couple of hours or overnight.
- Preheat the oven to 180°C.
- Put the medallions in a baking dish, pour over the marinade, then season with black pepper and scatter the spring onion on top.
- Bake for 20- 25 minutes.
- Serve with chopped fresh herbs scattered on top and lime wedges on the side.
- Alternatively, griddle, grill or barbecue them for 3-5 minutes on each side, until charred and serve with the chopped spring onion and coriander leaves.
