Asparagus and butter beans salad

Background
This asparagus and butter beans salad is a quick and easy recipe, perfect for Summer brunches and lunches, served on piece of sourdough or toast. Alternatively, serve it as side dish with grilled meat or fish.
Ingredients
- 2 cloves of garlic
- 1 Tbsp capers
- 1 Tbsp olive oil
- Β½ tsp chilli flakes or Β½ chilli, chopped
- 1 bunch asparagus
- 1 tin butter beans
- Grated zest and juice of 1 lemon
- Chopped parsley, to serve
Instructions
- Thinly slice the garlic.
- Snap off the woody ends of the asparagus.
- Heat the oil in a pan, then fry the onion and capers for 30 seconds, then add the chilli or chilli flakes.
- Add the asparagus and the lemon juice.
- Cook for a couple of minutes, then add the drained butter beans and a drop of water.
- Season with salt and pepper and warm through.
- Serve warm with chopped parsley.
