Background

This asparagus and butter beans salad is a quick and easy recipe, perfect for Summer brunches and lunches, served on piece of sourdough or toast. Alternatively, serve it as side dish with grilled meat or fish.

Ingredients

2 cloves of garlic
1 Tbsp capers
1 Tbsp olive oil
½ tsp chilli flakes or ½ chilli, chopped
1 bunch asparagus
1 tin butter beans
Grated zest and juice of 1 lemon
Chopped parsley, to serve

Instructions

Thinly slice the garlic.
Snap off the woody ends of the asparagus.
Heat the oil in a pan, then fry the onion and capers for 30 seconds, then add the chilli or chilli flakes.
Add the asparagus and the lemon juice.
Cook for a couple of minutes, then add the drained butter beans and a drop of water.
Season with salt and pepper and warm through.
Serve warm with chopped parsley.
