Asparagus with feta and dill dip

Background

This is such an easy recipe! Just grill/blanch the asparagus, make the dip et voilà you’ve got an amazing appetizer or starter - it’s healthy, tasty and very delicious!

Ingredients

1 bunch of asparagus
50g feta
2 Tbsp crème fraîche or Greek yoghurt
½ lemon, zest only
1 Tbsp chopped fresh dill
1 clove of garlic (optional)
Couple of pinches of cayenne or sweet paprika

Instructions

Grill, griddle or blanch the asparagus until tender (it should have a bite!). If you blanch them, make sure you rinse them under cold water after cooking.
Meanwhile mix the feta, crème fraîche, lemon zest, dill with a fork and add the garlic (if used) and a pinch of paprika or cayenne. Combine. Season, taste and adjust it to your liking.
Put the asparagus on a serving plate and spoon the dip around.
Serve at room temperature.
