Background

This baked fish with herb & lemon crust is a very easy meal, ideal on busy days. Serve with chips, mash or just a salad.

Ingredients

1 Tbsp extra-virgin olive oil
2 skinned thick white fish fillets (such as hake, haddock or cod)
50g breadcrumbs (can be gluten-free)
1 garlic clove, crushed
zest of ½ lemon
1tbs chopped fresh tarragon
1tbs chopped fresh chives
1tbs chopped fresh parsley

Instructions

Preheat the oven to 200C.
Lightly grease a baking tray with oil.
Season the fish and put, skinned-side down, in the tray.
Mix the breadcrumbs with the herbs, add the garlic, oil and lemon zest.
Cover the tops of each pieces of fish with breadcrumb mixture, pressing it down slightly.
Put the tray in the oven and bake for 10-12 minutes or until the crust is golden and the fish is cooked through.
