Background

Fantastically tasty and super-easy recipe for a BBQ party. You can prepare it in advance and leave it to marinate overnight or just for a couple of hours. If you're short of time you can cook immediately.

Ingredients

4 chicken thighs
2 tsp Dijon mustard
½ tsp basil (chopped )
½ tsp oregano (chopped)
½ tsp thyme (chopped )
½ tsp rosemary (chopped )
1 clove of garlic (minced)
Salt & pepper

Instructions

Mix the herbs with mustard and vinegar, then pour this into a small plastic bag .
Add the chicken thighs. Tie the bag, then massage the chicken legs in the marinade until the legs are thoroughly covered.
Rest in the refrigerator for at least half an hour, but ideally for 2-4 hours.
Season to taste, then grill or barbecue gently until cooked through.
Serve warm or cold with salad or grilled veggies.
