BBQ chicken marinated in spiced yoghurt
Background
If you like spicy, Indian-style food and want an easy recipe for a party, try this BBQ chicken marinated in spiced yoghurt! You can make it as spicy as you like - just substitute some or all of the chilli powder with paprika, particularly if you want to serve it to children too. I used chicken thighs, but drumsticks and breast would work too. Serve it with a rice salad, chutney and/or grilled vegetables.
Ingredients
- 4 chicken drumsticks and/or thighs
- 4 Tbsp natural yogurt
- ½ tsp chilli powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- ½ ground turmeric
- ¼ tsp ground pepper
- ½ tsp garlic powder (1 garlic clove minced)
Instructions
- Using a sharp knife, make a few slashes in each piece.
- Mix all other ingredients in a bowl. Put the chicken pieces in a freezer bag and add the spiced yoghurt. Tie the handles, then rub the mixture well into the meat through the bag. Chill for at least an hour, overnight if you can.
- Heat your BBQ, grill or griddle pan.
- Remove the chicken from the marinade, shaking off any excess.
- Cook them for about 15 minutes, turning regularly until cooked through.
